Pilot Bread Recipe Contest Winners

Congratulations to the 7th Annual Pilot Bread Recipe Contest winners of the 2017 NYO Games Alaska! Submission categories included Traditional Topping, Healthy Topping, and Youth Submission, and recipes were be judged on originality, flavor, and visual appeal. The winners were announced the NYO Games closing ceremony, Saturday, April 29.

Traditional Topping:  Karla Lawrence, Anchorage
Salmonberry, Blueberry, and Blackberry Agutaq (Eskimo Ice Cream)
Ingredients:
–    Pilot Bread crackers
–    Caribou fat
–    Fresh seal oil
–    Freshly fallen snow (when in season)
–    Salmonberries, blackberries, blueberries or cranberries (fresh or frozen)
Directions:
Melt fat over low heat and cool. Add cooled fat to large bowl and whip by hand until pure white and fluffy. Add fresh seal oil and blend into mixture. Add freshly fallen snow (if in season) to mixture and fluff up even more. When done mixing by hand, add berries. Eat and enjoy!

Youth Submission: Sarah Vreeman (NYO athlete), Fairbanks
Avocado-Chicken Crackers
Ingredients:
–    Pilot Bread crackers
–    Butter
–    Avocado
–    Chicken
–    Pink Himalayan sea salt
–    Cheese (optional)
Directions:
Butter Pilot Bread, warm in toaster oven. Mash avocado and layer on Pilot Bread. Shred chicken into small shreds and press onto avocado. Lay three slices of avocado artistically on top in fern pat-tern. Sprinkle with finely ground pink Himalayan sea salt. Add your favorite cheese on top to add a colorful flavor (optional) and enjoy!

Healthy Topping: Frank Beltran, Jr., Anchorage
Pilot Bread with Smoked Salmon, Avocado, and Gouda
Ingredients:
–    Pilot Bread crackers
–    Avocados (smashed or guacamole)
–    Thinly sliced red onion or sweet onion
–    Smoked salmon (strips, canned, or jarred)
–    Thinly sliced tomato
–    Thinly sliced smoked Gouda cheese
–    Cilantro leaves
–    Sprouts
Directions:
Spread smashed avocado or guacamole on Pilot Bread. Add thinly sliced red or sweet onion and shredded smoked salmon strips (or canned salmon). Add smoked Gouda cheese and cilantro. Top with a mound of sprouts and enjoy!
